South Africa Meat Utilization
South Africa Meat Utilization
By Keith Denoncourt
Boris Basso is Professionally preparing fresh Sable and Impala. The open smoked grill cooking method makes this a mouth watering meal.
One of the most common questions that I get about my South African Hunting adventures is “Where does the meat go ?”. That is a very fair question, but for some reason the most times that I get asked that question is when someone has already decided that the meat has gone to waste. Nothing could be further from the truth. First of all, the “Hunting Tourism” dollars that are brought into the South African Nation is immense. The Ed Stoddards report in the Daily Maverick estimates roughly 3.5 Billion dollars annually is generated by the local hunting industries alone. That being said, one of the my personal driving forces behind a complete Hunting Safaris is to experience the local cuisine and culture first hand. The local food sources are an amazing treat that we receive shortly after arriving within Boris and Lezanne’s care. They personally offer a wide variety of different flavored Biltong sausage meat, along with refreshments, that will be made immediately available during your stay in South Africa. That, along with your personal harvests, will be prepared for you back in camp or at the main Lodge.
The process of donating the meat back to the local communities, and utilizing the meat in camp, is not new. The Non Typical Nation team and Basso Safaris have followed and replicated this idea from other Outfitters. We too have mentors, and professional guidelines that we follow. As well, we have a very high personal standard for supporting the local community. This idea of supporting the community has never been new. In fact most Sportsman do it repetitively back home in our daily lives. My personal experience is that Hunters and Sportsman are the first people to step up and support a local community. The bottom line is that absolutely nothing is wasted, with several thousand dollars invested into a community with each active hunter.

Daily reflections, and celebrations, have always included a wide range of flavors of wild game sausage meat called “ Biltong”. The value and appreciation that is dedicated towards the life of that animal is unmatched.
Daily Brai’s are a daily treat. Boris and Lezanne offer BBQ style lunches truly need to be experienced to be appreciated.
The staff take great pride in processing your entire animal for you. The entire animal will be utilized very respectfully. Nothing is wasted.
Some of the meat is donated to the local schools and orphanages. It was very humbling to see how much they truly appreciate and value our involvement.
Freshly prepared harvests are quite common for dinner.
Basso Safaris take great pride in supporting the local community. We follow the examples and the leadership of those who have gone before us.
